Madrid Fusion, touted as the “world’s most influential international gastronomy summit,” is returning this week.
For its 22nd edition, chef with Spanish blood and Filipino heart, Chele Gonzalez, is the only speaker from the Philippines, who will present on the first day of the gastronomy congress.
“With a style of cooking he describes as anthropological, this Cantabrian has revolutionised the gastronomy map in the Philippines,” Madrid described the Spaniard chef.
Gonzalez, whose full name is Jose Luis Gonzalez, is originally from Torrelavega, Spain.
He arrived in the Philippines in 2011 to serve as the chef at Sofitel Philippine Plaza’s Fever restaurant.
Gonzalez is best known for his restaurant, Gallery by Chele, in Taguig City. This was included among Asia’s 50 Best Restaurants 2021 list of restaurants ranked from 51st to 100th.
Meanwhile, Madrid Fusion’s theme this year is “Where it All Begins.” It will run from January 29 until 31 this week.
